Ubisoft has officially confirmed that the Japanese release of Assassin's Creed Shadows will be "censored" compared to the Western release. This change was made to comply with the CERO ratings board, to keep the game's age rating down.
The change in question is the removal of realistic dismemberment, which can be turned on and off in the Western release. This isn't uncommon for Japanese titles, as dismemberment in general has a larger impact on their ratings versus the west. While the ESRB will give a game an M rating for such content, it isn't enough to push it to AO as it would in Japan.
Other games that have received similar treatment in Japan includes Lollipop Chainsaw, which actually released with two versions in Japan.
